APPLE SPICE MUFFINS

 

It’s apple season and we couldn’t think of a better way to prepare for fall! These Apple Spice Muffins are perfect for breakfast or a treat during the day. The warm spices of cinnamon, nutmeg, ginger, and cloves paired with bites of your favorite type of apple are sure to give you the warm and cozies.

INGREDIENTS

2 cups favorite apples (peeled, cored, and chopped)
2 cups gluten-free flour
1/3 cup of non-dairy milk
1/2 cup organic melted butter or favorite oil

1/4 cup raw honey
2 free range eggs
1 tsp vanilla

1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/8 tsp cloves
1 tsp baking soda
1/2 tsp Himalayan salt 

DIRECTIONS

- Preheat the oven to 350ºF.
- Grease muffin pan with butter or oil.

- Peel, core, and chop apples and add them to a saucepan on medium heat. 
- Cook the apples down just until they become soft, but not mushy. 
- In a large bowl mix together non-dairy milk, melted butter or oil, honey, eggs, and vanilla until smooth.
- In separate bowl mix flour, salt, baking soda, and spices.
- Add wet ingredients to flour mixture and stir until moist and add softened apples.
- Spoon batter into muffin cups.

- Bake for approximately 30 minutes or until fork comes out clean. 
- Let cool on a wire rack. Enjoy!
