CHICKEN AND KALE SOUP
This is the perfect winter soup that will warm your soul with the rich flavors of the vegetable medley mixed with just a hint of rosemary.
Ingredients
2 cups chicken breasts (cooked and chopped)
8 cups chicken broth
3 garlic cloves (minced)
2 celery stalks (chopped)
1 large onion (chopped)
2 large carrots (peeled and chopped)
2 cups kale (chopped)
1 small rosemary sprig (remove stem and finely chop the leaves)
Salt and Pepper to taste
Directions
Pour all ingredients into a large stockpot and heat over medium-high heat.
Bring to a boil then lower the heat and simmer covered about 30 minutes.
Cook until vegetables are tender.
Add salt and pepper to taste.
